Viasox is excited to share a delicious and diabetes-friendly recipe featuring grilled chicken breast. This dish is called Lemon Herb Grilled Chicken Breast, and it's not only nutritious but also full of flavor.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, basil, thyme, salt, and black pepper to create the marinade.
  2. Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for the best flavor.
  3. Preheat your grill or a grill pan to medium-high heat. Remove the chicken breasts from the marinade, allowing any excess to drip off. Discard the remaining marinade.
  4. Grill the chicken breasts for 5-7 minutes per side, or until they reach an internal temperature of 165°F (74°C). Cooking time may vary depending on the thickness of the chicken breasts.
  5. Once the chicken is fully cooked, transfer it to a plate and let it rest for 5 minutes before serving. This will help the juices redistribute and keep the meat tender and juicy.
  6. Serve the Lemon Herb Grilled Chicken Breast with a side of steamed vegetables or a fresh salad for a nutritious and diabetes-friendly meal. Enjoy the delightful combination of flavors while maintaining a healthy and balanced diet.
